of the
ultimate expression of a beloved american icon the steakhouse it's not the
first time he's been on the
show but it's the first time he's been in conversation and i couldn't be more
excited to have him here with
me eric wareheim thank you so for having me this is what's that thank you for
having me i'm i'm just
taking that intro and that's that was powerful it's a lot so what's going
through your mind as you're now
looking back uh on this 20-year career 20-year plus career a lot i mean first
off it's the first time
i've heard you even say those words i don't think you've ever said master of
none out loud i've said
it to other people yeah i mean uh let's go let's start at the end which i like
to do the book steakhouse
i have a copy here beautiful crimson red thank you reminds me of the leather
booths that you'd see
in a steakhouse uh the people the places the recipes it's a beautiful hefty
book uh just right before we
went live i had made a what i thought was a fairly innocuous joke about it
feeling like a textbook and
you appreciate that i didn't because it's uh it's you know more of an artistic
journey i i i was only
referring to the heft and the seriousness of it which is a i believe a
compliment i do acknowledge that
and i apologize and i come on it's beautiful cool cool yeah we'll get into the
photos just a quick
question a clarification of you are you settled uh on the font oh yeah yeah
this is the book this is the
done this is going in stores with the font that you've chosen it's i didn't
want it's not like hey would
you it's not right it's where the notes i was never given an opportunity to
give notes so this is my
first time seeing it but it's a it is a nice font i'm just curious there's so
many fonts i sent you the
you happen to be in the book i don't know if you know that or not i do know
that let's let's jump
oh i just jumped to it and i don't know i don't want to ruin the binding here
but stretch it is that
okay yeah can i give it a little no you don't need to see this i mean taylor's
los angeles
okay so you put out the cookbook 2021 it was a big hit food time new york times
bestseller
they said i couldn't do it and these are recipes that you that are near and
dear to you heart your heart
a lot of my motifs recipes her omas village food but then fried chicken just
things i love a lot of
things and you say the publisher is very excited about the success of the book
they say eric we need
another are you talking about the new book no i'm i'm going back to foodheim
gotcha publisher can't
believe they took a swing with you and you hit a home run publisher also yes
they took a chance on me
but they also gave me the speech once i was like listen it's very hard to get
on the new york
times bestseller list and i was like is this reverse psychology but no they
just didn't think i had a
chance which is the best thing they could have said because then i i worked i
got a tic tac right
and then i didn't i couldn't do it because i couldn't figure it out but um yeah
we made it i cried
the public the publisher thank you for admitting that a lot of men are crying
now it's very popular
yeah i it was it wasn't like an in vogue cry it was like i can't believe i did
this it's nuts oh
congratulations but the publisher said okay get back to work we want another
book yeah it was a
little bit more like hey can i make another book like a little flipped on that
because the experience
with foodheim was like they're like okay let's go and then it became something
that they don't really
it's like our work they don't really understand it until it's done right same
with steakhouse it's
it was something it started with us when we were in charlotte that one
restaurant beef and bottle that
that experience let's go back to that charlotte north carolina directing a
commercial for truest
bank a bank truest we're there for like a hundred days how what's your first
experience with banks you
must have been a pnc guy back in philadelphia that's a good question i've been
with um city for far too
long right but once our misha left i'm i'm it's bad okay well let's get off the
banking track i don't
think people want to hear us talking about banking hey it's your show i didn't
want to talk about
banking i know i know i'm i have i'm taking responsibility for that we're you're
in north
city we're in the city we're city guys you're in north carolina with tim heidecker
hosted this show
and you we go out where you you always got when we go land in a spot you're you're
the guy that's
figured out where we're going to go eat oftentimes i'm not interested you're
not you stay at the hotel
if there's an applebee's you do that i'm happy to do room service i'm happy to
watch the game
and sit inside my relax and relax i need to rage and go an adventure but i want
to actually talk
about that night because we go to dinner at do you remember the name of the
restaurant yeah beef and
bottle do you remember how many miles it was from the hotel it was a little too
far i mean it was like
50 minutes it was a long drive i was like we're never gonna do this no but all
we had were these
corporate chains and i was i wanted to experience a little charlotte right so
in your mind you're
saying i need a new book i need one i don't know what it is i had an idea
called it was meat and
potatoes it was like but it was it was about also village food and stuff like
that but my cousin kalou
who you know i love cousin clue has written a book just about pasta yeah you
can write about one thing
so people do salsas just a salsa book well it's a joke yeah they just i'm like
when when i can't when
i don't when i asked for when i asked for 200 extra pages they said i said no
that's too expensive
i'm like well you guys make salsa books oh no not dissing salsa i love salsa
but i'm like was it going
to be 200 pages thinner than we have here it was going to be more oh i pitched
them 11 steakhouses like
let's do it i got on the road i fast forward i shot 65 because i i honestly
felt a duty to these like
institutions duty i mean with this kind of diet that is part of the equation it's
a lot of steak so
so at what point do you go this isn't about this is about the food but it's
also about this this
underworld or this uh this culture it's not this dying culture honestly it was
that that first person
we met at beef and bottle in charlotte jerome big guy big gold crucifix right
and do you remember
what he said no he said come on in you all gonna have a great time i'm your
bartender and your server
what kind of martini you all want your home it was a hug there was so many
things he's he's doing both
jobs martini's the only option which is the only option at steakhouse it should
be but it did because
at that time pandemic things weren't open i think it was pandemic um but that's
the feeling that and then
all of a sudden it wasn't about the food it was about the feeling of being
there you go there to
celebrate these people have been working their whole lives each each one is
unique what when did it shift
to being primarily what i consider to be it's it's at least half and half a
photography book i mean we
got the best guy this guy marcus nielsen who tried to get we're trying to work
forever and he's he's a
chef and he's an adventure guy like he's a motorcycle guy as i as i am fine oh
really uh just as of this
weekend i got my first motorcycle harley uh no it's a mitsubishi oh and i didn't
hit motorcycles and
it's also a midi it's a run on it's a midi motorcycle midi keyboard motorcycle
oh so it's
just it's a virtual use it as a microphone a motorcycle or a keyboard i would
love to take a
look at that okay um but you took a lot of these photos yes there's a moment
where i was so like
turned on by like marcus was shooting the food but i was seeing everything else
as you know i do very
observant sometimes i saw like we do the background character what is he doing
i ran over there started
shooting and that was the owner just like watching us this takes me back 30
years to college do we
have any of those pictures matt producer matt is here hey matt and vick burger
is here as well vick hi
he said hi i thought you said body body body and you're being very well behaved
back there
wow okay so that's not exactly what i was thinking but does anyone know does
anyone know who the top
person is there i think that's i mean even the host of the show there's two
guys yeah wow uh but but
there's other pictures that are more uh like you would take people off the
street yeah you'd you'd treat
them almost like a diane arbust kind of thing very like beautiful what is it
medium format yeah photos you
remember uh big prints you're a master of the dark room and that's an
interesting yeah i mean it does
feel a little bit like some of the stuff in the book this is like the only
difference is you know
what i did back then you you you you you actually solved the puzzle like this
this is a journey it was
like steakhouse book but i was like what is what is what's happening here and
when i showed you some
portraits you're like that's what you you've done your whole career yes and it's
it's making people
the first thing is like there's almost there's almost no one smiling like in
the book because i feel
like that you can see the person and and that was like the director for marcus
and then i started
shooting as well and like totally yeah not to get too academic with it but the
those old photographs of
yours feel like it was very much what is the least cool thing i could be doing
what is how can i present
myself in the most ugliest way yeah exactly went right through into our our
work together i think
cindy sherman cindy sherman like people like that that were doing it they used
to get i used to get
these big photography books they used to be around they were like part of the
living room we shared
we used to hang out and talk and look at books look at books watch listen to
music on a side note i have
to tell you my daughter amelia very creative very artistic she's getting into nirvana
big time i should
send you this photo or this this video matt and i was and that so she's really
into nirvana which is
pretty cool it's really cool and then i was like do you know about the smashing
pumpkins
and she goes i've never heard that before in my life what is it i go put on
where's my phone i'll
send you this this is important what the song is yeah matt i'm gonna turn her
on to her bonnet or she
found it herself kind of found it herself uh but i mean i know we make fun of
smashing pumpkins
to of what you know they're billy corgan's kind of a goofball and everything
but for me siamese dream
was a big record and for you gish was a big record you remembered but i know i
go to i go we're ready
to go to school yester
